Job Description

We are a leading hospitality group aims at building iconic restaurant and hospitality brands that offer exceptional value to our guests. Due to rapid expansion, we now have an exciting opportunity to join our team as Head Chef.


Responsible for all food production including that used for restaurants and other outlets. Develop menus, food purchase specifications and recipes. Supervise staff. Develop and monitor food and labor budget for the department. Maintain highest professional food quality and sanitation standards.


Menu & Food Development

  • Primary objective is to establish The Greater China Restaurant Company (GCRC) as the home of the best fine casual dining available in the markets we operate.
  • Experiment and create new and tasty menu items that sit well with the different brand positioning, our customers’ tastes and preferences, and the market’s direction.
  • Review and where necessary improve existing menu items.
  • Plan yearly menu development calendars.
  • Manage suppliers to ensure the best quality produce at the best prices.
  • Work with the Ops team and Marketing to create daily, monthly, seasonal and periodic menu items.
  • Communicate the DNA of the different brands via the language of food, wowing customers and driving repeat business.Support the marketing initiatives of the business through meeting with journalists and bloggers to promote our menu and brand identity


  • Upkeep the hygiene and cleanliness of the kitchen facilities, the personnel and the food and ingredients and ensuring the restaurant complies with local regulation.
  • Ensure that day dot systems are effective and all expired items are destroyed and correctly accounted for.
  • Maintain the highest standards of kitchen cleanliness and safety (food & equipment).
  • Ensure consistency of product through good systems and procedures, well documented recipes and How-to-cards, effective new product training and a transparent quality control process.


  • Recruitment and career development planning for kitchen team members.
  • To coach and develop key kitchen team members such that we are able to build a core team that supports additional restaurant openings.
  • Ensure that all statutory and Company policies regarding staff welfare, recruitment, discipline and discrimination are adhered to.
  • Ensure that all staff receive regular training in compliance with both Company regulations and where applicable by law.
  • Motivate your team and establish effective channels of communication for all restaurant information including conducting daily briefing with staff.
  • Build an inclusive workplace in which people from highly diverse backgrounds and with different skill sets are fairly treated and respected.  Avoid favoritism and the creation of factions or clique
  • Recruit staff and conduct on-job training and performance appraisal for staff
  • Ensure that the kitchens are effectively managed and appropriately staffed at all times
  • Suspend subordinates pending disciplinary action, report any such events to HR department


  • Responsibility for the kitchen P&L, overseeing Cost of Goods, Wastage, Purchasing efficiency and Par levels, Spoilage
  • Management and analysis of menu mix, item margins, effective use of menu engineering to drive sales and improve margins
  • Establish systems and procedures that ensure effective portion and cost control


  • 8 years related experience and/or training; or equivalent combination of education and experience. 
  • Able to interact positively with supervisor, management, coworkers, members, and the public to promote a team effort and maintain a positive and professional approach. 
  • Able to produce a high volume of work in a timely manner, which is accurate, complete, and of high quality. 
  • Able to come to work regularly and on time, to follow directions, to take criticism, to get along with co-workers and supervisors, to treat co-workers, supervisors and members/guests with respect and courtesy, and to refrain from abusive, insubordinate and/or violent behavior. 
  • Fluent English is required.
